Surprising taste of two Yunnan dishes

People in Xishuangbanna Dai autonomous prefecture of Yunnan province are fond of moss cuisines as their tradition. Dai people often pick moss a wild algae, from clean rivers to make dishes. After being repeatedly pounded with wooden sticks, cleaned, chopped, and then dried in the sun, the moss is slowly roasted over charcoal until crispy. Its taste will then change.

Hot sticky rice topped with moss flakes is of distinctive flavor that you can probably find in Yunnan only. The fresh taste of the dish deserves a try. In Yunnan, moss can also be fried, which gives it a jade-like green look. When dipped into special seasonings, the moss provides indescribably delightful sweet taste with its crispy texture.

In Dali Bai autonomous prefecture of Yunnan province, roasted pig skin is an attractive dish. The whole pig is often roasted with straw covered until its skin turns golden brown. After hair removed and cleaned again, the pork is sliced and plated. The roasted pig skin is actually medium well, with the fat underneath medium rare in golden hues. Paired with spicy sauce, the taste of dish is tender and succulent.
